Tuesday is date day for us. It’s been like that for quite a while now (years!). So this last tuesday, we went shopping, made vegan pizza and finished watching “Stranger Things” on netflix.
We finally got a good coffee. I don’t drink coffee often (couple times a month if that, I’m a green tea gal), but when I do, I want good coffee. We will be testing various coffees from Contigo. This one is the melange. Christian wanted a strong coffee, I wanted a milder coffee, this is the compromise in the middle. It’s organic and fair trade. And it smells delicious!
This is the junk part of our shopping. I hadn’t tried the Dinorex and the Veggie Chips before. The Dinorex, well, I liked a couple of them. The blue and purple ones were rather yucky. The Veggie Chips on the other hand, SO tasty! It’s oily and salty deliciousness, can’t go wrong there (tastewise that is). The Vivani Chocolate Bars (the vegan ones) are always super yummy. Strawberry waffle crunch and White Nougat Crisp are my two favorites.
This is a raw vegan pesto in the flavor of wild garlic-tomato. Haven’t tried it yet, but it looks good!
Now onto the yummy vegan pizza part…..
We make pizza a lot. We use mostly whole wheat flour, a pack of yeast, some salt, dill and warm water. That’s it. No oil needed! We used to let the dough rise for a couple of hours, lately, though, we used it right away and it came out great, too!
Lately, I’ve switched to making the sauce myself. And it is SO easy! Just mix tomato paste with a bit of water and add loads of spices. I usually add a little salt, pepper and oregano (lots, I love it!), basil, rosemary. Often, I also add some curry powder. That’s because I add curry powder to everything. I’m weird like that….
Sometimes I use vegan cheese, sometimes I don’t. I love pizza with just sauce and veggies. But tuesday I was in the mood for cheese on the pizza. And this is my favorite (apart from when I make it myself). It’s a vegan mozzarella made from organic rice and it is amazing!
This was a decadent pizza! My toppings included mushrooms, broccoli, spinach, yellow peppers, artichoke hearts, onions and crumbled meat balls. Usually we add corn to our pizzas. We forgot, oops!
We put it in the oven for about 25 minutes at about 200°C.
And here it comes in all its glory! Vegan pizza!
